Exam Focus

  • Use CO2 or a CO2-nitrogen blend at proper pressure for draft.
  • Never use compressed air with traditional kegs for normal service.
  • Party pumps put oxygen in contact with beer and make the keg a same-day item.

Dispense gas

Beer should be dispensed with appropriate gas that maintains carbonation and flavor stability. Air exposure rapidly damages beer.
