Exam Focus
- Filtered beer can usually be poured completely.
- Use a 45-degree glass angle, then straighten to build foam.
- Most beers target about 1 inch of head.
- German wheat beers and Belgian ales may traditionally have larger heads.
- Retain sediment unless the guest or style calls for it.
Filtered beer
For beer without yeast or other sediment, pour down the side until the glass is partly full, then finish down the middle to build the right foam.
Unfiltered beer
For beer with sediment, pour gently and watch the bottle neck so yeast stays behind unless it is intentionally included.
Key Terms
- Unfiltered beer
- Beer packaged with yeast or other sediment still present.
